Ever since I was little, I absolutely loved Thanksgiving. My great-grandmother, Grandma Irene, was the best at making desserts. I truly miss her, and when I went vegan five years ago, I was always wondering how I could recreate her peanut butter fudge. Thankfully, I was able to concoct this vegan version that everyone now adores. It is completely and utterly the best thing that will ever hit your taste buds.
And with Thanksgiving right around the corner, I wanted to share this recipe with everyone.
Ingredients:
1 cup butter
1 cup peanut butter
1 teaspoon vanilla
4 cups powdered sugar
Instructions:
Place butter and peanut butter into microwave for 2 minutes.
Take out of microwave and stir until well combined.
Put back in microwave for 2 minutes, or until it begins to boil. You will see the bubbling start to happen.
Add the vanilla and powdered sugar.
Mix together and put in an 8x8 pan. You can line the pan with parchment paper and smooth down the fudge with the spoon, or you can disregard the parchment paper and put it in the pan without it.
Refrigerate until it's hardened, which typically takes about 2 to 3 hours.
Once it's hard, cut into slices and enjoy.
